Jo will teach you how to make this delicious soft cow’s cheese at home using just four ingredients. Jo and Matt will reveal their favourite ways to enjoy Neufchatel cheese with recommended wine pairings while sharing their wealth of knowledge on the best things to do in the Yarra Valley for a weekend away, longer stay, or even a day trip from Melbourne.

Neufchâtel Cheese – what you will need


Large pot
Clean tea towel or cheese cloth


4 litres unhomogenised milk
250g cream
1.2ml rennet (calf or vegetarian)
flora danica culture or kefir

The drained curds
The drained curds


1. Bring milk to heat, add rennet and culture. Let sit.

2. Scoop curds and drain.

3. Tip the drained curds into a bowl and season with salt. Hang.

4. Shape the cheese as you wish. You can coat in herbs and spices to add some extra flavour.

5. Pair your cheese with bread crisps and wine!
