Founded by Matt and Lentil Purbrick (of Grown and Gathered) in partnership with Matt’s father head winemaker Alister Purbrick of Central Victoria’s Tahbilk winery; Minimum is a new youthful and forward thinking wine label focused on organic, minimum intervention wines, natural growing principles and true sustainability from vineyard to (and inclusive of) the bottle. Its launch offering includes a 2018 Sangiovese Syrah, a 2018 Chardonnay and a 2019 Sangiovese Rosato – all wines that have simply blown away the team at Essentials.

With a vibrance in fresh, lifted fruit aromas, and delicate palate weight and texture, this is a collection of new wines from the Purbricks is most certainly a must try/buy. The wines are shining examples of how minimum intervention winemaking coupled with organic and biodynamic vineyard management produces elevated quality in fruit flavours and pleasing additional aromatic subtleties.  We simply adore these wines.

‘In preparation for launching Minimum we have spent the past 2 years converting a 125-acre vineyard on the Goulburn River to organic, with full certification due in time for vintage 2020, and we have employed minimum intervention practices at every stage of the winemaking process,’ says Matt Purbrick.

By planting trees, Minimum’s wine range actually sequesters (or captures) more carbon than it produces. Each bottle is also recyclable, including the label, while every cork is compostable and its boxes are made from 100% recycled materials.

Made with organic, naturally-farmed grapes, both wild and cultivated biodynamic yeasts, and low sulphur additions, Minimum’s launch varietals are elegant, light, fruit-forward, celebratory wines, made for drinking now.

For the Purbrick family, a love of great wine has flowed in their blood and through their land for five generations, ever since Tahbilk Wines was taken on by Matt’s great, great grandfather, Reginald Purbrick, in 1925.

‘After decades of working and living on the land we’re moving into a new phase of winemaking, and of living: actively searching for the minimum,’ adds Matt Purbrick.

‘With those changes comes a new company, one that sits alongside Tahbilk like an irreverent and change-making sibling.

2018 Sangiovese Syrah, 2018 Chardonnay and 2019 Sangiovese Rosato

2018 Minimum Sangiovese Syrah (RRP $26)
Sangiovese gives this wine upfront black cherry, caper, bay laurel and cinnamon spice aromas while the syrah offers underlying ripe plum, blackberry, blackcurrant and clove complexity. A carefully balanced mid-weight dry red. Fine dusty tannins, concentrated fruit flavours, complex spice notes and generous length.

2018 Minimum Chardonnay (RRP $26)
A beautiful fruit forward nose with understated and delicate oak influence. Lovely white peach, apricot, quince, ripe fig and mandarin aromas. Extended lees contact in predominately seasoned barrels adds complex baked bread, wild herb and spice fragrance and a pleasant creaminess to the palate to balance a clean acid line and developed flint characteristics. Finishes with persistent fruit-filled length.

2019 Sangiovese Rosato (RRP $26)
A wine with a vibrant aroma. Bright raspberries, sour cherries, strawberries and cranberries with a hint of strawberries and cream lollies. Wild barrel ferment components add contrasting savoury and dried herb elements. Palate is clean, dry and super refreshing with lively raspberry and strawberry notes persisting.
