The depression of the 1890s accelerated a pattern of brewery mergers that eventually saw just a handful of leading market players that would ultimately water, or dumb down craft ale brews, targeting national mass-market sales.<\/p>\n A century later, Collingwood has been revived by a group of newly established independent craft breweries taking the concept of premium, handcrafted ales to frothy new heights. Within the past five years, operators including Stomping Ground, Bodriggy, Fixation, Molly Rose, and The Mill have opened their doors.
