Coriander and Lime Mayonnaise
3 egg yolks
2 tsp Dijon mustard
2 tsp white wine vinegar
200ml olive oil or sunflower oil
½ bunch coriander, well washed
Zest and juice of 1 lime
Salt and pepper to taste
½ tsp smoked paprika to serve
Method
1. Place egg yolks, Dijon mustard and vinegar into a small food processor and blitz until light and creamy.
2. With the processor still running, slowly drizzle in the oil gradually until a mayonnaise is formed. The mix will change to a thick consistency and pale colour.
3. Add the coriander, lime zest and juice and blitz well.
4. Season to taste, serve topped with a dusting of best quality smoked paprika.
BBQ Corn
6-8 fresh corn cobs, husks on
Salt and pepper to taste
Fresh cut limes and olive oil to serve
Method
1. Over an open flame BBQ, grill cook the cobs in their husks for 10-15 minutes, turning occasionally.
To Serve
Tear open the corn husks, season the corn with salt and pepper, drizzle with extra virgin olive oil and finish with a squeeze of fresh lime juice.
