The Queen Garnet plum is considered by many the crown jewel of Australian plums. Jam-packed with seven times more antioxidants than other plum varieties, the Queen Garnet is now available in Australian stores until the end of March. The plum is a great recipe ingredient for both sweet and savoury dishes, including this Scandinavian-inspired salad bowl that flavoursome, low GI and highly nutritious.
2 Queen Garnet plums, finely sliced
1 small fennel, finely sliced
150g hot smoked salmon
200g ancient grain rice blend (or brown rice, quinoa, wild rice blend)
¼ cup olive oil
¼ cup Queen Garnet plum nectar
1 tbsp balsamic vinegar
1 tsp wholegrain mustard
1. Begin the salad bowl assembly with your ancient grain rice blend as the base and layer over with salmon, watercress, fennel, avocado, sliced plums. Top with fennel fronds.
2. Whisk olive oil, nectar, balsamic, wholegrain mustard until combined and pour over salad.
